Meatball Sauce (with a Kick!)

  1. Sautée the onions, carrots and celery until they are translucent
  2. Add diced fire-roasted red peppers, salt, pepper, Italian seasoning, garlic and crushed red pepper flakes then cook the blend for three minutes
  3. Add the red wine and both cans of tomatoes (water included). Cover the mixture and let it simmer for 20 to 30 minutes
  4. Pour the mixture into a mixing bowl. Using a stick or immersion blender, purée the mixture until it is smooth
  5. Add your favorite meats or use the mixture as a stand-alone sauce (Note: the sauce does have a little kick, so you can use more or less crushed red pepper to taste)
