Healthy Valentine's Day Truffles

  1. Gently melt the coconut oil in a saucepan on medium heat and pour it into a mixing bowl
  2. Add the remaining ingredients and combine them thoroughly
  3. Pour the mixture into a shallow bowl and refrigerate it until it is solid (about 1.5 hours)
  4. Using a small spring-release cookie scoop, scoop out the truffles, one at a time, and place them on a parchment-lined baking sheet. If you would like to add more sweetness, dip the truffles in shredded coconut or chopped nuts
  5. Place the baking sheet back in the refrigerator until the truffles are firmly set (about 30 minutes)
  6. Transfer the truffles into a glass storage container and keep them in the refrigerator
